Following the introduction of Chez Mal Brasserie to the Malmaison estate, the Glasgow opening marked the 9th Chez Mal to launch in the last 2 years
The Brasserie has three private dining areas, which share the intimate atmosphere and are the perfect setting for a family get-together, a meal with friends or a celebration without any interruptions.
All the excitement of an evening out with all the intimacy of an evening in, private dining is a quiet restaurant revolution. Peruse our magnificent menu and select your wines without interruption in our gorgeous Glasgow hideaway. Our private dining rooms at the Malmaison Glasgow can cater for up to 56 guests; choose from one of our elegant menus specially designed by the Malmaison Chefs.
For small groups up to 20 guests the Set Menu and a la carte menu are available in either Chez Mal or Mal Private Dining Rooms. Larger parties with a minimum of 8 people can enjoy our informal finger buffet menu or for functions, our private dining menus.
Mal bar brings you cold beers, crisp bubbly and a creative array of inventive cocktails, all in a cool and colourful setting with an electric atmosphere. Pull up a blue pew amongst the pop art and peruse the majestic menu of wines, ales, cocktails and spirits. Watch our mixologists work their magic alongside the beats of our resident DJ on Friday nights.
Our new Head Chef, John Burns has 12 years service with Malmaison, starting as a Commis Chef here at Glasgow, has worked in all Scottish Malmaisons, and every position of the Kitchen throughout his Career. John rightfully won Malmaison Chef the Year award in 2013 and is now Group Support Chef for the estate.
HOW WOULD YOU DESCRIBE YOUR COOKING STYLE?
I’m keen on simple things done really well, my cooking is classic Anglo-French – or maybe Franco- Scottish, with an emphasis on the best natural ingredients.
WHAT HAS INFLUENCED YOUR DEVELOPMENT AS A CHEF?
I know a lot of people are influenced by travel and other chefs, but I’m driven by a desire to do well. I’m pretty ambitious and concentrate on getting every detail perfect, so that has been my main driver.
WHAT ARE YOUR OWN FAVOURITE FOODS? AND ANYTHING YOU WON’T EAT?
I love French food, with my absolute favourite being a fine Apple Tarte Normande, with a frangipane base and melting caramelised apple slices. Mmm! I also love Japanese cuisine and would happily eat dashi udon noodle soup and nigiri sushi most days. The one thing I cannot stand is plain boiled carrots.
WHAT CAN WE EXPECT FROM THE MENU IN CHEZ MAL GLASGOW?
A bold and colourful mix of contemporary food using fresh UK produce. Dishes will vary throughout the year on the A La Carte, alongside a seasonal Prix Fixe featuring modern French, Asian and Mal Classics such as the Mal Burger, Fishcakes, 4 styles of steaks from our Grille and the famous Chateaubriand for 2.
WHAT INGREDIENTS ARE YOU INSPIRED BY RIGHT NOW?
Asian, Middle Eastern Spices. I am working on building some new flavour profiles for our changing seasonal menus for the rest of the year. I’m hoping to visit Japan in the near future to broaden my knowledge of this style of cuisine.
WHAT'S YOUR FOOD GUILTY PLEASURE?
I’m guilty of running on cereal when I’m on the go. I do cook some good food at home but I’m known to indulge in a Cheese & Ham Sandwich with Burger Relish!
